Hey ill be going down to florida at the end of december and id just like to know what bites in the winter in the fort myers beach area.

It really depends on how cold it is, I know over on the other side of the state at Juno they can catch cobia during that time but i dont know about Fort Myer. So maybe spanish, whiting, pompano, jacks, and bonito.
I've only been fishing in that area around Thanksgiving as well, so I'm not sure what to tell you other than ask the locals. It might be worth sending Snookn21 on here a message as well; he's a vendor on here that lives in that area & goes fishing around there.
I would try to pier on Sanibel Island if you get the chance, though; I've caught various fishes there (skates, catfish, snook, etc.).
