Sand Substrate

I am setting up a tank that i was wondering the same thing about, currently its about 30" on the one i have running....but it is an overflow

You should not have a problem at all! Its a problem with canisters as they go all the way down.
 
Youre right, i dont have a problem with the one i am currently running, its the one I am setting up I may have a problem with:)
 
Recently someone was suggesting 3"s and a nylon socor sponge to keep out the sand.

That depends on what fish you keep. If you have big diggers, then it needs to be more than if you just have a few Corydoras. In my tank (w/ Corydoras) it's 2'', and no additional sponge or so. And it is plenty safe. But then, I have playsand. If you go with finer grain size, it will swirl up more.
