They r one of most delicous fish on plate no matter how u cook it will be tasty still., long ago asian market would carry live version, now u can only find it in frozen section and gutted out already

Delicious, but as to your categories of classification, to the keep them and love them (I'm not so sure about holding and squeezing but w/e) as long as you don't release them into our waters!

Go to asian big chain asian market..u will find ur 18" knife fish frozen ready to be sauteed however u want it
