I am starting a 500g build and have a question regarding to the sealing of the tank. Can I hot mop it and call it good? Or will the tar make the tank uninhabitable?

Nice to see you on here Josh. As said above roofing tar will not work as it is not a water proofer rather it is "water resistant". Meaning it won't hold the static pressures of an aquarium.
Definitely do not use roofing tar. It sounds like you know about roofing, so look into a product called Wetsuit. It is a liquid neoprene rubber that you can paint on. I have a thread about it on here.
