Service intervals on bio-media/sump on Ray tanks

I know a lot of our tank set ups are alike and I was wondering what the service intervals you guys are doing on your big sump set ups. I have a little worry over here with an ammonia spike that I can't seem to get to Go away. I have a weird intuition that my submerged ceramics have become choked or clogged and are causing a major clog in the filtration process. Anyone else ever experience this?i have a 3 cuft or so reactor in a 44 gallon trash can along with 60-70 lbs of submerged ceramics in my sump,Mechanical is 100 micron socks. 100+Gpd drip. Not to extreme on stock levels 4 juvie Rays ranging from 7-10 inches.I feed moderately twice a day to keep ammonia spikes down. I noticed my fire eel "scratching" herself on the bottom of the tank tonight so I tested water and it showed positive for ammonia. Any clues or input would be much appreciated.
 
If your ceramic rings are collecting organics, I would clean them with some tank water. Could you post a picture of the media? I have ceramics in my canister filters and they get clogged routinely and I wash away the big organic debris. I wouldn't clean it while the filter is "online" with your tank. Make sense?

Yeah I would then return pumps off... I'll get a pic of it tommorrow...

I have 2 chambers of bio media and one moving bed chamber. Personally I clean my bio media twice a year. On each occasion I clean only one chamber, removing all the media that sits in individual filter bags and rinsing in tank water.
