North & South American and European crayfish are easier to sex, there are very obvious appendages on the males that aren't on the females.
Cherax species are a little more difficult as the males on have small little "nubs" on the last pair of walking legs. They look very similar to the females because of it.
And females in all crayfish have pore-like receptacles on the third set of walking legs.
