At what age can you typically sex a jag?

Wanting a pair without having to rehome leftovers. I have this thing where I just rehome to other tanks cause I hate to get rid of fish :/

Ask the store if you can buy them all to grow them out till you get a pair. then return them for the same price. They will make more money in the long run.

The thing about buying just 2 is, just because you get a male and female, doesn't mean they will be a compatible pair.
As far as fish go, cichlids have a much more highly evolved courting instinct and system, beyond simply spawning with any port in the storm, and with individuals you choose for them.
This is why they go thru the elaborate dances and flaring rituals.

Acquiring half a dozen and letting them work things out is much better, and often keeping more than 2 in the end, also works for the best.

A pair may need stimuli help maintain a bond, such as another pair, or few individuals on the other side of a divider to provide an outlet for the aggression energy normally used to fend off fry predators. Without that outlet the pairs are left with turning that energy against each other
