1. Look under their skirt:

2. The smaller the harder, the bigger the easier. You can start to see them around 1.5-2 inches. Anything smaller might be to hard to see.

3. I've found some of my fairly small ones attempting to breed. I'd say around 3-4inches.

I had my mother cray in a 40 gallon tank to raise her young. Just have a tank with some places to hide, sand or gravel don't hurt ether.
 
They cannibalize. Keep them well fed and give them enough room to spread out and it should not be a problem.

They will eat each other though when their young, it's just what they do. You can stop it if you really want 200+ babies by separating them in different tanks.
 
thanks again...uhm,can 2 crayfish kill each other?i have a female,and i bought a male this afternoon but it is smaller than the female.
 
Their most at risk from killing each other when they just molted and are soft and vulnerable. If they get in a fight when their carapace is hard, the most damage they can do is snip off a limb or two which will grow back, Unless it is a really outnumbered fight.

Be aware that mating looks like a fight. Looks a lot like rape to me. Male holds down females claws in front of her face while she's on her back. The rest is self explanatory.
