My floor is slightly uneven so shimming is a must.

Question are:
- composite or wood shims?
- I plan on putting stand on foam board but is this a bad idea if also shimming?

Shim with composite. Wood will work also but with really heavy tanks it may crush down some. No foam under the stand. Foam is normally used for minor imperfections and pressure points under the tank.
If the tank has a frame you don’t need to put anything under it.
Just shim the stand level and you should be good.

What if tank is acrylic, and stand surface is flat piece of plywood. Might there be some imperfection we can't see therefore good case for foam?

I probably would use some 1/2 inch high density foam. Some people are of the opinion that foam isn’t needed under acrylic. I have no personal experience with acrylic all my tanks are glass.
I do use foam under my frameless glass tanks.
