Hi, I have a beautiful Jack Dempsey who is about 6". I love his colors but I'm kind of frustrated by his personality. He comes out sometimes but always runs and hides when I come into the room. He comes out and eats then swims around during feeding time but that's about it. I would like to get one more larger and more personable cichlid with him in the 75 gallon. Preferably one that swims around the tank more and is less shy. Does anyone have any suggestions. He currently has some cons with him and a catfish.
 
JD's are very shy by nature. Even with the addition of dithers and/or tankmates, they are typically skittish and reclusive fish. Every once in a while you will find a nice JD that's a bit more outgoing, but still nowhere near as interactive as some of the other CA's. If you want a highly interactive "wet pet" Cichlid for your 75G, try one of the following: Oscar, Red Devil/Midas (any Amphilophus Species), Flowerhorn, Green Terror, Black Nasty, etc.

+1 just watch out for aggression issues. An Oscar may be your best bet for personality with a POSSIBILITY of a little less risk of aggression
