20gallon should be fine for him alone, it is pretty much considered minimum. If you can get him a little bigger tank down the road it won't hurt, but he will be okay in a 20.
Best staple diet for him is a good quality pellet. New Life Spectrum is considered the highest grade of fish food ingredient wise, though Hikari and plenty of other brands will be fine to feed him as well. Occasionally, he would probably enjoy some frozen or freeze dried protein-rich food like krill or bloodworms as a treat.
Convicts are very cool little fish, good luck with him

A 20gal long is better then a regular one. And that will be fine for a single Male Convict. Gourami is right about the diggers and floating plants. It will make your convict "wake up" quick!

Give him some time, if he doesn't come around in a week or so I would recommend adding some small dithers like skirt tetras, and some floating plants. These can make all the difference with solo fish.
right after thanksgiving I will get some tetras because this guy does not even come out to eat

Another trick is, put the tank up high. With a small tank it’s easier to do. But fish get nervous when you look from above like a predator

I have kept convicts before but never had one so skittish and scared it wont come out to eat but I will take all of your information and put it to use

It's only been 3 days. Give him some time. Ive had a monster convict I don't know if I keep one in a 20h forever. Mine was going to war with an rd so I put him in a 29 which was pushing it.
