what kind of snapper?
 
These guys can be pretty active so just stack a few rocks and throw in a few pieces of driftwood for them to explore around. I'd recommend keeping the tank bottom bare of substrate for easy cleaning. You can put some sort of floating plants in the tank too like water lettuce or anacharis. 78 degrees is a good water temp I believe.
 
vicious is right, they are from the gulf so warm water and some rocks for them to swim over should be fine. You might want some actinic light to bring out his true colors.
 
I keep my common snapper in a 300 that is about 2/3 full (about 18" of water) that is set at about 76 degrees. I don't have a basking spot, I had one for him for 4 years and he never used it that I know of. Snappy eats mostly turtle pellets, supplemented with night-crawlers and feeders. If you can get them to eat pellets it makes things a lot easier, plus they're loaded with vitamins and minerals.

One thing you need to watch is that there is nothing in the tank that he can swallow - you can see a piece of vinyl tubing in the x-ray...

give him a protein rich diet supplemented by minnows and shrimp, he'll be alright
