South American cichlid stocking 75gal

Im getting my 75 gallon on Wednesday and I'll be setting it up on Thursday so im thinking about stocking for when it is fully cycled.
My sailfin pleco, a pim pictus catfish and potentially 2 Bolivian rams will definitely be going in there. The set up will be a sand bottom, lots of bogwood and rocks for plenty of hiding places. No plants.

Im thinking of adding some columbian or Buenos Aires tetra to act as dither fish, but what larger south American cichlids can I add?
Im thinking a severum, hopefully I will be able to find a red spotted and another large cichlid.
What about a jack Dempsey too?

Any ideas?

I am also planning on getting some more pim pictus because I know they should be kept in groups.
The filtration will be an all pond solutions ex2000.

A jack dempsey would probably destroy your rams, and don't know if this matters, but JDs are not South American, they are North American from the Yucatan in Mexico.
