Im looking to do a Plywood tank type build buy for the bottom, back and framework i was looking to use sheets of stainless steel and was wondering if this would be safe for fish. I know of no reasons why the metal would harm then if its stainless but I want to be 100% sure so I thought this would be the place to go, thanks!

Using stainless is completely safe. The problem is stainless runs 2-3 times more than standard grade 50 steel and requires special equipment to weld properly. The proper type of stainless for most tanks is 304 ("food grade") however if you want to have an extra safety factor or are doing a salt water aquarium 316 ("marine grade") is necessary. Remember due to Galvanic Action you cannot place any metal other than stainless in contact with it otherwise one metal will corrode the other (generally stainless degrading standard steel or aluminum).

that would look sweet. im sure it would be far from cheap though. would def like to see lots of pics if you follow through with the project
