So I set up a 100 gallon tank with a wet/dry drip filter (new) under the tank with another 20 gallons in a 40 breeder. I took all the sand from a 50 gallon cycled tank of the same temperature, siphoning the sand off the bottom and adding it to the larger tank. moved 2 aqua clear 110 overflow filters that hang on the back as well as all the décor from established tank to seed new tank. I added new sand as well so half and half. I had to put my fish in right away as the 50 gallon had a chip that was leaking. My fish load is a 8" Mammon, 6" blood parrot, 2 small parrots about 3" each, a 4" flower horn and 4 albino Corys. so about 22 inches of fish total. The cory cats have layed eggs. all over. Its been about 10 days. PH 7.0, ammonia 0, nitrite .10 ppm, nitrates .5 ppm. a couple of the fish are starting to strike at the sand like itching but no signs of ich or fungus. Should I do water change? ride it out? do salt baths? I am so worried that my tank is going to crash and have some awesome fish that I am not wanting to risk!

Looks like you have done all that was possible and available. Moving all the filters and media, sand, still its going to take few more days for getting the new tank completely cycled. I would say watch out the water parameters more closely, do partial and more frequent water changes for a next few days/weeks. Also watch closely for any stress/disease.
