Well, now that I am in the process of moving, and I plan on getting a 75 gallon tank for my pair of texas, I am left with two empty tanks:a 30 and a 55!

STOCK IT!

I want the tanks to look nice so preferably fish that dont eat plants because I am hoping to plant the tanks a little

COLOR!

Colorful too... even if it is MONSTER if its all grey and dull then it really is worthless to me

BREEDABLE!

I am not trying to make profit but I would like to see some babies ...

you could do severums or jds in the 55, maybe firemouths or some sourt of gourami in the 30
 
Some Dwarf african cichlids in the 30 gal. make sure you get pairs! And maybe some RD or JD's in the 55 gal.
 
2 Red Devils in a 55? Someone prebook the funeral.
If you have the finnancial capabilities then turn the 55 into a discus themed tank.
 
Something new and colorful are golden cardinal tetras. They are a selectively bred species of cardinals that my boss has been ordering into our store, no ink or anything either! They look hott with plants, discus, or angels.
 
I was thinking discus as well but the money might be too much...

No JDs, I already did them...
 
What about plecos? I would like to try to plant tanks now with compatible fish.. discus are the number one thing in my mind right now
