I am thinking about restocking my 55 gallon. I was thinking about a electric blue acara but am having trouble with the rest of the stock. Could I get some ideas about what is feasible for my tank?

You could do a firemouth, the red would compliment the acara very nicely. You could also try some other redish fish, cherry barbs maybe or tiger barbs. Although the tiger barbs could be a little too mean.
I would go with a severum (red or rotkiel) or maybe a festivum, and then a school of larger tetras like black skirts or Columbians. The severum would give you a little more size but still be relatively peaceful.
