stocking and growth rate question

I just got a 60 gallon aquarium this week and am trying to decide what to put in it (after the cycle is complete of course). I am leaning towards some severums. I was wondering how many could thrive in a 60 gallon. Is there a preferred ratio? I am wanting to get a green severum and a red severum for sure. If I can comfortably support more than I'd like to get a gold severum and/or a turquoise severum. Eventually I will upgrade to a larger tank but it will be at least 1-2 years before that happens, which leads me to my second question. What is the growth rate of severums under normal circumstances (meaning not trying to accelerate their growth). Also, do they have a reputation for destroying plants?

Another type I'm interested in is satanoperca jurupari (eartheater). This would be instead of the severums. A LFS nearby has some and they are nice looking. Different sources I've searched have said different max size for these so I'm not sure if I could keep them and if so, how many. I chose sand for the substrate so if I chose these they would be happy. And as I asked above, does anyone know their growth rate? The LFS had 1 1/2" and 3" to choose from.

Well, after some more searching I found a thread called Geophagus Jurapari that was actually about Satanoperca Jurapari. It said the growth rate was slow so that is good to know. If you have any other good tidbits of info on them let me know.
