Current stocked tanks
5 gallon - breeding rcs
33 gallon - 5 honey gourami, 2 sparkling gourami, pair of apistogamma, 6 false julii cories, 1 amano shrimp, 2 mystery snails
25 gallon - breeding rarer livebearers and BN Plecos
10 gallon - clown killifish, and veil tail cichlid
29 gallon - 5 boseman rainbows (do they need a bigger tank or is 29 big enough?)

Unstocked cycling tanks
75 gallon - was thinking a brackish tank.... any suggestions?
10 gallon - was thinking 4 scarlet badis and mixed neocardina shrimp
5.5 gallon - was thinking of breeding black and white bumblebee shrimp

Tell me what you all think and what I have to or should change

I personally would give the Bozeman Rainbows a larger aquarium.
 
There's a lot of different fish you can keep in a 75 with rainbows. Acaras, angels, red tail black shark, so many 5-6" or less fish available and rainbows are pretty calm. A convict pair maybe, feed them your extra shrimp lol. What fish do you really want to keep?

What about a pair of angels, rams, glass catfish, and hill stream loaches?

The temp requirements for the hillstreams is quite a bit off of the others. I'm not 100%, but I believe they like it much colder. Are you talking German ram variants or the natural SA ram? I'm personally not a fan of the German variants, pretty yes but they seem weak to me. Glass cats, Angels, rainbows should all do fine. The natural rams would also. You'll need some one who has better knowledge of hillstreams to answer that.

For the 75 decided on a stock. 5 boseman rainbows, school of glass catfish, 5-6 scarlet badis, 8-6 tri-banded orange sumo loaches, 3 Pearl gouramis.

For the 30 gallon I'll do guppies, bumblebee gobies, 1 or 2 f8 puffers, and maybe mollies depending on how the f8 puffers react with the other fish.
