I got a leaking 55 gallon with a bunch of filters a couple months ago for 10$.
I just got around to sealing it and have it on a stand and a canopy.
I was thinking of doing a JD pair and an convict pair. Is that a good stocking?
And when the convicts breed will the JD's just eat them right away?

no a JD pair need a 55 for they self. so do the con not the JD.

or he could do the JD and not the cons . . . I think a 55G might be a little tight for a JD pair, but it is lot of room for a convict pair . . .

but 100% agree, you should not do both . . .

I've got a 55 gallon with a male JD in it. I don't think a pair of JD's would be right. My guy is only about 5" now, but in a few inches he's gonna max out the tank by himself. I'd go in the direction of Convicts if you're looking for more than one fish.
