Substrate-Best and worst

HI!
I am looking for information on the best substrate for super large tanks (such as over 1,000 gallons) for heavy carnivorous fish.
True- What I am trying to say is I am looking for information for what is the best substrate for fish that are put out a lot of waste.
Yes they are. But they still eat and put out a lot of waste such as our carnivorous species. I am looking to see what advice those who have been in the greater than 1,000 gallon tank size with larger fish such as those species I listed have in regards to substrate to aid in keeping ammonia levels down (assuming you also have a very good filtration set up).
Seems like most people who keep large fish like pacu in similarly large tanks go bare bottom for ease of maintenance.

. Big waste producers would simply have any substrate packed with nitrate producing crud in no time. And you simply can't vacuum huge tanks that easily, unless you get in!
Much easier to go bare bottom where crud has no where to go but eventually out of your outlet pipe to your filters.
