Suggestions for an easy-intermediate brightly colored breeding project

Right now I have a group of neon jewel cichlids, which I've heard breed pretty easily w/ a cool WC. I have one small group right now but I'd like to move up to something w/ more value and more color after a spawn or 2.

So here are my ideas, the pricier discus (something like red rafflasia or turquoise striped) since they're quite popular in my area, hemichromia elongata (since they're just another breed of jewel shouldnt be too difficult) and Nicaraguan Molly's (gili). Thanks for the input, any tips on breeding any of these specie is greatly appreciated. I'd like things like minimum tank size for a pair how long it takes to get to sexual maturity, what the tank setup should be like etc
