It varies, color depends on more than just breeding, but for starters, color-enhancing food is always a plus

Colors are more enhanced during breeding yes, that being said I think most sunfish are gorgeous year round.

most are colorful all year round some color up based on mood in a tank with multiple sunfish there tends to be an alpha that is more colorful than the rest.

As others have said, colors intensify during breeding season but most species are colorful year round
