You may or may not remember me saying I was going to do it. Well i finally did.

I had to do it twice actually because the fixture was to low, so we had to dismantle everything we did and do it higher. This time we added holes at the top so we could adjust the elevation whenever we wanted without having to hacksaw the thing off.

It's working just as planned, unfortunately because of the angle of my ceiling we cannot get the canopy fully opened. It works fine though, but full movement would be nice. I need to install a fan in there because it gets really hot, i almost burn myself when i open the glass lids, but if your careful you shouldn't hit the light.
 
if you drilled a hole in the canopy, put a large bolt through the top, and attached a nut-washer-butterfly nut you could have adjusted the light's height simply byt tightening the butterfly nut :)

Thanks, light is adjustable, the bolts don't go through the canopy, they go threw the 1x1 boards i used as a frame/suuport. We just drilled the holes for access to the bolts :)
