So I had my first sushi last week and again today for lunch. I absolutely love it, I mean it is incredible. I always knew I would like it, I eat fish all the time in NE so I just knew it would be good, but I was always nervous about going without someone that knew what they were doing.

So this week I went with some guys from the job site I am on right now, they ordered some stuff, I loved it, now I am hooked. Since my company pays for all my food I will be getting it at least a few more times this week while I am still here.

So I was sitting there today wondering a few things as I ate my sushi.

1) How often would it be suggested to have sushi? Can you eat it everyday, or should it only be once or twice a week?

2) Proper things to do when eating it? Like, is it proper to put the wasabi in the dish with the soy sauce? Thats what the guys told me to do, but a quick google search told me thats not what you do. So if thats the case what should you do?

Some of the other things it said made some sense, things with the chop sticks, rubbing them together, placement of them, etc.

It also said, when you dip in the soy sauce, not to dip the rice, but to dip the fish then pick up the rice. So would you pick up the whole piece and place it on the little rectangular dish, remove the fish, dip it, place it back on the rice and then eat it? I dont know all the proper names for the dishes...

So then if that is what you are supposed to do would you dab the wasabi on the fish first, then dip it in the soy sauce and place it it on the rice and eat?

I am just curious because I know japan is a very traditional county and I think its proper if you are going into "their environment" to do things at least close to the proper way per their culture.

Lastly I would love to get some suggestions on things to try, I like the raw stuff more than any of the cooked stuff so far. Yellow tail, is my favorite that i have tried thus far. So give me some things to try!

now after a few more website visits i get both impressions, some say dont stir in the wasabi some say to stir it in...hmmm help here?

Better question; how fresh is the fish away from the ocean? Come to a coast and then try Sushi. Most Sushi places/people don't pay too much attention to the kinds of details you brought up - those are very very specific things that you might expect at a really classy, upscale/ritsy resteraunt. As long as you're polite and clean, I wouldn't think it's much of abig deal. That said, it's not considered correct to mix the wasabi/soy sauce. If the other stuff is what you read, then I would go by that.
The only other thing I can think of is not to cross the chopsticks.
Eel/avocado, spicy salamon/avocado is usually pretty good. It's too bad you're not on the east coast, I could suggest some places.

It's all about personal tastes! You're paying for it (through your company) so if you want to mix the wasabi with the soy sauce do it! Did you get a chance to try any tuna? Tuna is my favorite. As far as eating it often.......be careful with the wasabi! :D And......on another "health" note......larger fish have higher concentrations of mercury in their flesh, so I would research that and I would limit myself to 3 times a week at most.

thanks for the quick replys. Right now I am in Cali, so I am on a coast haha

I will be on the east coast again in a few weeks, NE area if you know some places.

I tried a few kinds of tuna, yellow tail, today i had some tuna belly and the other day I had tuna that was a deep red color but i couldn't figure out the name today? any idea what that could have been? I think it was blue fin? I had halibut today too, that was real good. All the reading about it makes me want it again! But I will wait until tomorrow I think haha

I didnt realize that they put wasabi under the fish and rice and I see that you dip it upside down (meat down) not rice down and its more proper to place the wasabi on the fish rather than in the soy sauce.

No rubbing the chop sticks, and place them parallel to you on the plate, not leaning off the plate. Those few things I think are pretty basic good tips from what I read online.

Fuji's in POrtland Maine is okay. Better - probably the best I've ever gone to is Osaka's in North Hampton, 20 minutes or so away from Amherst in western Mass. Really good. They also have a habachi (sp?) bar which is always a cool experience.
