I plan on being as diverse as possible with my guys food but was wondering if anyone had any tips on how to best wean them on to pellets.

This wont hurt the fish, and when they get hungry they will eat. They will first take the pellets and spit them out, which means they arent as hungry as they seem. Just feed a few at a time, and remove any uneaten, so as not to foul your tank.
try and be persistent with blood worms
get him on that as well as brine shrimp
krill and once he hits that up he will eventually take to pellets and flake
