I'm getting a few 40 breeder from the $1 a gallon sale at Petco this weekend. I'm only setting one right now the other two need equipment. Anyways I have a 15 and 29 that I'm taking down everything going into the 40 will be coming from these two tanks. Question is do I need to worry about any ammonia spikes or cycle since everything including the water will be transferred to the new tank.

No., and no need to transfer the water, just everything else.

Good point, you either need to transfer the filter, or the old media to the new filter, And if you clean the media, be sure to do it in old tank water. If you do this, you shouldn't be any need to cycle.
And agree that transferring old water to new tank isn't necessary, in fact fresh new water is a good this.
Aren't you transferring a filter too?

I wanted to use the water from the old tanks to reduce any spikes. since everything but the new tank is already established it wouldn't spike at all.
