Title states my question. What would the symptoms displayed by the fish be if nitrate levels rose too high?

overall stress. loss of color, loss of appetite, lowered immunity to fight disease, lethargic behavior, etc...
Warning you usually won't "see" high nitrates, but other issues will arise. Often times sickness like HITH, bloat, ich and such will be the noticeable issues but IMO healthy fish in clean water fight these off. Test kit helps until you get a consistent stock, feeding schedule, and water change schedule
