Assuming I wanted to have lets say 20x discus for life, the tank would be 3.5' tall, what would be a good width and length? also tank would be species tank with no other tankmates.

if I change the dimensions to 5' x 2' x 3.5', can I still get 20x discus, or is this overstocking? it would be a 262 g with this instead of 315g
 
Sure, that will work. A good rule of thumb is 8 to 10 gals. per adult discus. Just remember if you add a lot of plants, substrate, and other stuff to the tank, go much lighter on the stocking though, maybe 4 to 8 gals. per adult fish.
