I'm starting to pick out favorites and this is what I've come up with so far.
tapajos, datnoid, firemouth, GT, maybe a ray (I know they need width)

if all where bought at the same size and put in a big tank.

How well will they get along.
what possably problems will I have.

When you say tapajo, you mean orange headed geophagus? I dont think the geos and dat would be able to hang with the GT and FM. I think the GT and FM would work together given enough space, and I believe the geos and dat would work together. I also believe a ray would work with the last combo but I know NOTHING about rays so I would wait for others advice on that. Without the ray in the equation I would say you are looking at approx. a 125 gallon tank to have ample space for a decent # of geos and a dat. The gt and fm MIGHT work in a four ft. tank.

im new to dats and not sure what they will/wont work with.. i do know that they are very slow growers

dats go with everything but IMO you will hate the firemouth if you want more tankmates depending on the size though.

I'm going to take a guess and say because of the FM's teritorial agression?

you will probably not have any problems with the FM, I would worry more about the geo and the GT since they are about the same size, and they both will be the biggest cichlids in the tank.

ok I think I narrowed it down.

A couple of 2-3 geos, 2 dat's and 2 rays

what do you think?

and yes BIG tank 180+

You may run into aggression with only two dats. I would think you would have enough room to have more though. A 180 wont be big enough for 1 full grown ray I believe. I would wait for others advice though because I only own one dat and no rays.
