What do you guys think would be the ultimate freshwater monster fish to have an aquarium? I have a few ideas in my mind and they are not all arapaima.

Yeah, those two would be my suggestion.Those are all good choices. The obvious to me would be beluga sturgeon but I am not sure if they could live in freshwater their entire lives. I would say the next one would be the Mekong stingray since you would be measuring your aquarium in acres instead of gallons for one of those.

IMO the most sought after fish on MFK is the legendary Mekong Giant Catfish, Pangosiadon gigas. Other runner-ups include: Barrumundi, piraiba, Aligator gars, any sturgeon, platinum anythings, and ofcourse, in the US and Australia, any "forbidden fruit", Asian Aros, Snakeheads, Tilapia, Nankins...
