Every fish owner should have a lab grade liquid thermometer. It is the most precise and can you it to do baseline/calibration checks on your digitals

Yes, I use the lab to do a baseline on my other thermometers.

The lab will be precise. Most digitals are off by up to +/- 3° and on rare occasions more. If the lab says 78 and the digital says 76 then you know to mentally add 2° to your digital reading when you look at it.

Stick-ons work fine

Sorry but those are the most inaccurate thermometers on the market.
