My 120 now has a hujeta, green severum, Geo. Sveni, sharp nose pike cichlid, horsehead pim, a small doridae cat and a red fin pleco. I’m debating about leaving things as they are or adding a school of columbian tetra or rainbowfish. I don’t mind being a little overstocked
Any opinions are appreciated

I keep a group of twelve Columbian Tetras in my over crowded 120, which includes two juvenile Chocolate Cichlids, Filament & Denison Barbs, as well as numerous Botia Loaches. They look great & do well.

I would call it full, but you could add some shoaling fish if you can easily keep nitrates and tds really low and for that pike.
Agree
You have mostly S American soft water species, so tetras would be a good mix with those type parameters, and....be geographically correct (ie biotope).
In general, Australian rainbows prefer alkaline harder water, and would be as geographically in-correct as you can get, if that's important to you.
That said...... some of the rainbows from Papua New Guinea have evolved in water, much the same as the black waters of S America.

Those Columbian Tetras are beautiful!. :)

You're asking for opinions, so I'll have to be That Guy; I think your tank is plenty full as it stands, and personally wouldn't add any more fish...but, honestly, I feel that way about almost every tank I see, so...:)

Thanks for all the advice, I’ve decided to leave things as they are. It’s working great and I’m happy with it and don’t want to screw it up
