Tips and advice to pair your cichlids

Now I want to ask you guys what you think is the best way to make a pair in you tank and breed, now I know for most part the fish has to choose his or her partner but that doesn't mean there are way to help the process. Base on your own personal experience let me know what has work for you or what have you noticed with your pair, I know there is a section of breeding here but I put it here because I want to hear from you guys with south and central cichlids, thanks

Start with a large group of little ones. Let them pair off. Re home the rest. Dim the lights, turn on the Barry white.... Boom.
