Excuse my inexperience, but the fish in the top picture is a different colour than the fish in the other pictures. Is that male/female colouration, spawning dress or something else?

Yes...and likely bred out of existence in Media Luna with Carpinte "escondido". There's a couple other locations, but not sure where.
