I want to use two 36 inch metal tank stands to hold a 125 gallon tank the tank will not be full of water maybe 35 to 40 gallons max. And I'll be using at least 1 inch of solid wood for a base with that purple insulation foam in between. Am I doomed or will it work?

If both stands are evenly level with each other and the floor you should be fine.

I agree. A three column cinder block stand could be viewed as basically three stands supporting a single layer of wood under a tank.

Be sure however that each of the stands is rated to hold at least one half of the projected total weight. 40 gallons of water and the tank still works out to around 300 pounds per table.
