I know uaru will destroy and eat plants but had anybody had luck with them with pothos roots in the tank?... i don't want the roots to all be eaten.

My severums ate the pothos roots for the first year. After that they just quit eating them. I don't know why they quit eating them, they are still fed the same type of food as last year.

They'll eat the roots and stems, too. As Rocksor said, Heros do the same. I cannot keep pothos in tanks with Heros or Uaru. You'll have to rig some kind of system using baskets if you want to use them, or fill an HOB with them to keep them out of the tank itself.

I was afraid of this

I currently have a 4 inch red shoulder severum that doesn't touch the roots at all. But who knows as it ages. The uaru will be arriving tomorrow at about 3.5 inches.

Situations like these with highly vegetarian cichlids like the severum, and Uaru of S America, and the Cincilichthys and Vieja from Central, are where planted sumps (AKA refugiums) come in handy to protect the plants, and still have get their nitrate consuming benefits.
These refugiums can be as small as a 20 gal tank, situated above or below the main tank.
I used refugiums of Papyrus in the states because C bocourti could eat 4 ft plants into nubs in a matter of days.

In the case above I used a 20 gal tank in a window box, to make use of sunlight on a 6 ft tank of vegetarians.
