Sory samir but this aquarium can't hause pacu... None. You can update if u wanted. But you are going to update in future too. Those fish are for zoo or people with large system.

Ok. About height oh... You can go with anything you wand but more height mean more thicker glass = more money.
I will say go as big as you can. Old school rule.
You can always sell too big fish but in some country this is hard because there are too many big fish.
People make mistakes. This is going to be your first lesson. Don't buy tank busters in future if you can't provide aquarium for them.

For the most part, the height not really important for most of the species compare to the length and wide of aquarium.
36'' deep tank is hard to do maintenance. If u have gravel or sand this is extra hard cleaning work. If u have barebottom tank this will be easy. Extension glass cleaner for scrubing... Etc.
decide your self. 36'' is very deep tank.
I have seen tank that deep before but it's rare.

A 3'x3'x3' tank would look pretty neat Pacu will get to big though.
Tall tanks look impressive but are a pita.

just type in google : aquarium glass thickness calculator.
For your build i recomend 10 mm glass
36'' * 36'' * 24 = 152 gall
You will save alot if u just buy standard dimension tank from pet store.
I recomend custom build only for 300 gal +
