I'm getting a 75 gallon tank with either a Fluval FX4 or FX6. I've read that Pond Matrix can be better for removing nitrates but matrix is better for ammonia and nitrites. Would it be beneficial to split Matrix and Pond Matrix 50/50 to get the best of both worlds or is that overthinking it and I should just stick with 1 type? What type should I go with if that's the case. The stocking would probably be something like:

1 BP
1 BA
1 BN
8 Boesmani Rainbows
12 Sterbais

As far as i know there is no media removes nitrate. Nitrate is why we change water period. If you want something to help you with nitrates then add some pothos or maybe build yourself an anoxic filter

you're over thinking it. the only way to get rid of nitrate is water changes or anaerobic bacteria (which is hard to do in aquariums).

I thought I read that pond matrix could hold anaerobic bacteria. Or would it just not be enough media to do that in this case? Should I just go so regular matrix then?

no they are both bio media, they have large surface area for hosting the bacteria you need for the nitrate cycle, for me regular matrix is better for a canister. Keep in mind Matrix is a copy right of sechem. pond versus regular is the size of the product. regular is smaller than pond.
