I have heard a lot of skepticism about the viability of bacteria cultures in products like seachem stability so i started thinking about other things loaded with bacteria and came up with kombucha. Is there any reason why this wouldnt work? I dont see it being harmful in an empty aquarium.

Bleach too isn’t harmful to an empty aquarium

I Think the Bacterial cultures in Kombucha are more suited to human health than nitrification and denitrification in the aquarium. I don't think Nitrosomonas, Nitrospira and Nitrobacter among many others would be found in these drinks or in large amounts. Though this would act as a good food source for starting bacterial populations as wood most organic items.

Though I could be wrong and maybe some of these chemolithotrophic bacteria may be present in the drink.

All bacteria are not the same, there are billions of strains of bacteria, and I am thinking the ones that break down fish poop in your filter, and the ones they sell at whole foods for you to drink, are very different.
One too many IPA's today?

You might be better off taking a scoop from a septic tank to kick start a cycle than from some old rotting tea. At least the septic tank would be regularly dosed with urea and ammonia to feed the appropriate bacteria.

And I don't think many people would think that's a very good idea either...

I've only used Seachem Stability once years ago, but it worked well for me, although I had to use twice the manufacturers recommended dose to achieve the desired results. I know others that have had similar positive results using other similar products.

I was just thinking about similar today, but kinda going the other way: could I put bottled aquarium bacteria in my well (or secondary holding tanks) to help keep them cleaner/reduce sludge? Maybe not super cost-efficient but so far I haven't been able to find any bacterial based household sewage cleaning solution here.

Yup used it too. Also used nitrobacter 7 from brightwell that works really good but costs.

I used nitrobacter7 when I started my 75. I didnt measure the ammonia I put in I just dumped some in and used the correct measure of nb7. The next day I tested ammonia it was 0 I tested nitrite 0. I thought that was wrong so I added more ammonia again didnt measure and I added the correct amout of nb7 and 8 hrs later tested ammonia 0 again. I thought something was wrong and I didnt have nitrate test solution that was viable it was crusty. I went out the next day and got a new master kit and testsd nitrate 20ppm lol. I did a water change and added some fish I continued the nb7 dosing for the week and when I added fish. Never had ammonia spike I could measure or nitrite either. Nb7 also works in saltwater which is where I learned of it.
