Keep in mind while reading up he is tiny, almost fry still. The habitat, the behavior, and habits often change and can change drastically as fish grows into a juvi, sub-adult, and adult. Fish at different ages tend to occupy different environments.
Obviously a 5 footer has little-to-no need to hide for protection but only for ambush and does not fear deep open water the way a vulnerable youngster would and should avoid. Older fish often require more oxygen - hence preferring deeper=cooler and/or faster water.
Young often prefer shallow habitats near a shore with lots of cover and devoid of large predatory fish but vulnerable to wading birds - hence, they hide all day not to become a bird, snake, or small mammal meal. Warmer waters of the shallows also help increase the metabolism and grow quickly and as such better the chances of survival to adulthood = outgrowing the size most predators of water, land, and air can handle.
If there is no threat for him in the 100 gal, then why not? He should grow much faster, probably ~2 times faster in the 100 gal vs 30 gal. If you'd rather he grows slower to give you time to prep his final tank, then it's a different matter.
If he does not like the flow much, there should be plenty of quiet corners in the 100 gal.
