I would guess that is some sort of parrot fish/wrasse.

Sheepshead Wrasse (Semicossyphus reticulatus)

heres a Pacific Sheephead Wrasse. only a 4 lb small male, besides the coloring and hump I see similarities. I dont thing that beast is a sheephead tho
