Water changes and levels during fish in cycling

I’m currently doing a fish in cycling because I did not know better. Tomorrow marks 3 weeks since i’ve had my fish. I have 1 peacock bass and 2 blood parrot chiclids in a 75 gallon aquarium with a fluval 407. Last wednesday I went to my LFS and talked to the guy and he recommended prime and stability. Before using these products I had about .25-.5 ammonia and 0 nitrates and nitrites. I started using the stability as it said on the bottle and applied for the next 7 days. Though it’s only been 5 days and I tested my water the other day about 3 days after using it and i started seeing levels of nitrite being produced but no nitrates. I tested yesterday and had around 1 ppm ammonia and nitrites so I dosed prime immediately and did about a 40% water change today. It’s been about 5 hours and my parameters are about .25-.5 on both ammonia and nitrites and my Nitrates were about 10 now they’re at 0-5. I stopped dosing stability bc of the sudden jump in nitrites and nitrates because it’s starting to seem like the cycle is being built. I’ve seen no problems in my fish so far. So what’s the input like what should I do and what is exactly happening

If you have nitrate showing then you're on the right track, it looks like the stability has helped you out.

At this point I'd expect your nitrate to gradually rise and both the ammonia and nitrite to fizzle out to 0ppm.

Keep checking your parameters in the meantime, keep observing your fish, and feed sparingly. And you've always got prime to help you out, and of course partial water changes should your ammonia and nitrite get out of hand.

But I wouldn't expect them to given that your nitrate is building. Good luck.
