55 gallon tank. Wed i take 10g out and sunday i take 15g out with filter rinse on sunday. Is that to much or to little of a water change???

What are you nitrates? Is the tank planted?

Typical water change routine is 50% each week. If you want to change the water twice a week you have to change 30% each time in order to achieve the 50% weekly.

If your nitrates are over 20, you need to do a water change.

Your lack of water changes has your nitrates high.

Try to bring them down to 10 with the water change and change the water again as soon as they hit 20.

so i need to do more??? i just didn't know if to many was bad. should i take 10g everyother day?? Also i have one penguin 350 filter is that enough or should i have two?? I just didn't want to over or under filter.

Which part of the filter do you rinse? Cleaning the mechanical pads once a week is fine, but you need to leave the biological filtration alone.

depends on your stock, but if your nitrate is that high, then yes, you should do a WC.

%50 per week seems excessive, I do 20-30%, If you are overstocked, you should do more, but instead of 50% once a week, you could do 25% twice a week.

If 30% a week isn't enough you may need another filter with good biological filtration like a sponge or a canister.

Over filter? Is that possible?
