Typicly, 20~25% is adaquate. You're doing right, but you must always watch your parameters for changes. That's the best way to determine if a water change is needed or not, and how much to remove. Personaly, I do 50% once every two weeks, then I do 25% on half the tank one week, then alternate to the other side the next. I have a higher stocking density, so I am in need of more frequent changes.
 
after a water change, check your nitrates. If they are ok, you're doing fine. If they're too high, you need to do a larger change.
 
Sometimes I do 80% water changes, but I keep fish that are fine with that, some fish would get very stressed at that so it all depends on your fish, setup, feeding
