about hard kok and water kok? they are just branding name for FH try to cut the head of a FH try to see whats inside you wil just see white fish meat
 
Think of a water kok be more like a gel-like substance underneath the skin versus hard kok which is mostly just compacted layer of fat.

Massive nuchal humps as seen on FH with water kok, is mostly made up from fluid - the same as the fish where the hump originated from many years ago. (A. citrinellus aka Midas cichlid)

Smaller, firmer nuchal humps mostly consist of tissue, so again a lot of fluid, and a thin layer of fat.
