It seems like no matter what I do my nitrite always spikes. Ammonia is 0 nitrate is 5.0 and ph is 7.0. For the first day after a water change all is well the next it always spikes. Any ideas on what I can do about this?

How long has your tank been set up?
 
Its been up for 2 months. 0 nitrite in the tap. And I am running a sump I clean the filter pad twice a week

Maybe your filter is clogged or partially clogged? The filter may be undersized or the tank overstocked as well.

You could try adding water from another tank or wringing out a filter pad from another tank to try and get some bacteria in the filter
