is the tank cycling or you currently have fish in it?
 
Still cycling. When the ammonia and nitrite drop to 0 and your nitrates raise your filter is cycled. If there is a spike in ammonia it should take a should take a short amount of time for it to be converted into nitrate on a cycled filter.

Nope, don't change any. Let it cycle through.

I have kept fish for 25 years and never owned one.

lol i should of read that Li, i would wait till your nitrites and ammonia go down to zero or close to it before doing a water change.
