I have an amiracle wet dry filter and a sea life systems wet dry. The amiracle is 30 gallons and the sea life is 15 gallons capacity. I am planning to use the amiracle instead of the sea life and use an 800 gph return pump to the tank with an inline uv sterelizer leading back into the wet dry. Does this seem like enough filtration for a 180 gallon?
 
The 30g plenty for your primary filtration. Fill it with as much efficient bio media as you can. It's highly recommended to have another filter which can handle your tank on it's own if your primary filter fails. I would suggest a single fx5 canister as a second filter.

Will 800gph be enough turnover?
 
will it be beneficial to go with a larger overflow box and return pump when my bio load goes higher? This will be my only filter aside from the uv.
 
Yes it would better for mechanical filtration. But I don't agree on not having a backup filter. In fish keeping no matter how experienced you are, accidents happens.

I am guilty on the odd occasion during maintence of leaving a filter off for a significant period of time unnoticed. But i don't worry about it, as I know the secondary filter that will have no problems taking the load while the other plays catch up.
