how many can i fit of each in my 30 gal

kirbs
apistos
rams

???... do i need dither fish/ i want a cat fish or two to clean the bottom so account for them ( any ideas on cats to use would be helpful too)

In my opinion it all depends on the amount of decor.
If there is enough hiding space for them then there should not be a problem.
All of the species that you listed dont get too much over 3 inches as adults, so in sticking with the 1 inch of fish to every gallon you should be able to decently sustain 10 or so in each tank.
For cat fish I would keep it simple with 2/3 corrys(Albinos 1inch ) and 2or3 ottos (MAX 1inch)

the one inch rule isnt really what u think it is... in general aquaria discussion there is a sticky about how its not the length of the fish in inches its the volume in inches that satisfies the gallons
